👩‍🍳 Preparation

1. Prepare the biscuits
1. Preheat the oven to 180°C.
2. Line a baking sheet with parchment paper.
3. Beat the eggs and sugar in a bowl until the mixture is light in color, fluffy, and voluminous.
4. Add the coffee extract and mix.
5. Gently fold the sifted flour into the mixture in several stages using a spatula.
6. Pour the dough onto the tray and spread evenly.
7. Bake for 10–12 minutes.

2. Shape into a roll
1. Turn the baked biscuit out onto a clean, slightly damp kitchen towel.
2. Remove the parchment paper.
3. Roll it up with the towel and leave it to cool completely.

3. Prepare the coffee cream
1. Whisk together the mascarpone, liquid cream, powdered sugar, and coffee extract.
2. It is ready when you have a thick and stable cream.

4. Assemble the cake
1. Unroll the cooled biscuit.
2. Spread the coffee cream evenly over it.
3. Carefully roll it up again.

5. Time to decorate
• Sift cocoa powder over it.
• Garnish with coffee beans.
• Sprinkle lightly with powdered sugar.

6. Resting
• Chill the cake in the refrigerator for at least 2 hours.
