2. Brioche Buns (For Burgers or Sandwiches)

Soft, buttery brioche buns make an excellent base for any burger or sandwich.

Ingredients:

  • 2 1/4 cups all-purpose flour

  • 2 tbsp sugar

  • 1 packet (2 1/4 tsp) active dry yeast

  • 1/4 cup warm milk

  • 1/4 cup melted butter

  • 1 egg

  • 1/2 tsp salt

  • 1 tbsp milk (for brushing)

Instructions:

  1. In a small bowl, mix warm milk, yeast, and sugar. Let it sit for 5 minutes to activate the yeast.

  2. In a large bowl, combine flour, salt, and the yeast mixture. Add melted butter and egg, and mix until dough forms.

  3. Knead the dough for 5-7 minutes, then cover and let it rise for about an hour or until doubled in size.

  4. Preheat the oven to 375°F (190°C).

  5. Punch the dough down and divide it into 8 portions. Shape each portion into a bun and place them on a baking sheet.

  6. Brush with milk and let rise for another 30 minutes.

  7. Bake for 15-18 minutes, or until golden brown. Let cool before serving.


3. Brioche à Tête (French Brioche)

This is a traditional French brioche shape, often served as a sweet treat with coffee or tea.

Ingredients:

  • 2 1/4 cups all-purpose flour

  • 1/2 cup sugar

  • 1 tsp salt

  • 2 tsp instant yeast

  • 5 large eggs

  • 1 cup unsalted butter, at room temperature

  • 1/4 cup milk

Instructions:

  1. Combine flour, sugar, salt, and yeast in a bowl.

  2. Add eggs and milk, mixing until dough forms. Knead until smooth, about 10 minutes.

  3. Gradually add softened butter and continue kneading until the dough is soft and elastic.

  4. Place dough in a greased bowl and let it rise for 2 hours or until doubled in size.

  5. Punch down the dough and divide it into 2 portions. Shape into a round loaf and place in a greased brioche mold (or regular loaf pan).

  6. Let rise again for 1 hour.

  7. Preheat oven to 350°F (175°C) and bake for 25-30 minutes until golden brown.

  8. Let cool before serving.
